Pearl Diver Cocktails and Oysters Melbourne is a unique, nautically-themed bar that offers fresh oysters and an array of cocktails. The décor is inspired by the ocean, with pearl white walls, dark wood accents, and hanging nautical ephemera. Guests can enjoy fresh oysters from the in-house seafood tank or choose from a variety of cocktails made with premium spirits.
Alex Boon and Pez Collier of the Speakeasy Group (Eau de Vie, Mjolner, Boilermaker House and Nick & Nora’s) present their debut venue – Pearl Diver Cocktails and Oysters.
The extensive list of cocktails has been designed to perfectly accompany the fresh oysters on offer from Tasmania, Victoria and New South Wales. Alex and Pez are no strangers to top-notch hospitality, with Eau de Vie receiving awards for Best International Cocktail Bar.
Following a year-long mentorship under group directors Greg Sanderson and Sven Almenning, the two have created a space that offers Melbourne something truly unique; a dedicated cocktail lounge and raw bar under one roof.
The team behind Pearl Diver Cocktails and Oysters Melbourne have brought the best of the sea to landlocked Little Bourke Street. The seafood-focused bar and restaurant offers an ever-changing selection of fresh oysters, as well as cocktails and wine on tap.
Boon and Colliers design by Studio Y sees concrete finishes balanced with flowing drapery and plush charcoal banquettes – its a perfect spot for date night or drinks with friends. Head Chef Tim Read offers a modern Australian menu that takes inspiration from his travels around the world, so you can enjoy dishes like crispy skinned ocean trout with black garlic butter, miso glazed pork belly or salt baked celeriac.
Boon is the brains behind the cocktails at Pearl Diver. He’s whipped up a delicious signature version of the venue’s namesake – the tiki-inspired Pearl Diver cocktail – with Bacardi Carta Oro rum, Tasmanian honey, butter, spices, pink grapefruit and other citruses. It’s poured into a Pearl Diver-style glass with a narrow, ribbed bottom, making it easier to get your mitts on those delicious oysters. slurp!
Each drink stars an oyster shell or rock oyster shell, with a spherified liquid olive – created with Sicilian and queen olives, lemon thyme and garlic – accompanying the drink. There`s also the Martini starring Saint Felix oyster shell and wakame gin, Maidenii vermouth and white kunzea flowers. And for the wine list, Collier has assembled around 50 bottles split between local, French and Italian pours.
Its a place where you can come and enjoy some of the best oysters that Melbourne has to offer. There are two rocks and two Pacifics available au naturel with a range of dressings to choose from, plus a handful of cooked options (think Kilpatrick; Rockefeller with warrigal greens; or deep fried with sauce gribiche). Snacks might include salted-cod beignets with sorrel cream; duck terrine with a strip of foie gras; and coal-grilled octopus with harissa. But its not just all about the oysters – Pearl Diver has a fantastic cocktail list too!
