But without fail, they all take cocktails seriously. Whether you love a Negroni, Old Fashioned or an of-the-moment creation (there’s one every week), it’s good news for drinkers; better news still: Melbourne has some of the best cocktail bars in the world.

The Everleigh is a Melbourne bar for cocktail connoisseurs. The drinks menu includes creative cocktails like Son of a Beesting, made with Settlers Old Tom gin, lemon, honey and ginger; or Honky Tonk made with Bourbon and Montenegro.

Bar Americano is another impeccable offering from Matt Bax, the maverick behind Caffe Sospeso, Bar Economico and Bar Exuberante.

Ponyfish Island is a floating bar anchored under the Southbank pedestrian bridge in Melbourne. They serve fresh Asian-inspired cuisine, crafty cocktail menu and local wine and beer. Following a redesign, Ponyfish Island now features terrazzo-topped tables, comfy lounge areas and custom sunshades with bright colors to make the space feel more lively.

The island takes its name from the elusive Ponyfish seen swimming in the Yarra River that is still debated whether it actually exists or just a legend. And there’s no bookings, walk-in only.

Gimlet at Cavendish House is a cocktail bar and dining room in Melbourne, Victoria. This space is open for all seasons and reasons, from casual catch-ups to intimate booths to elegant dining stage above the city streets.

The refashioned bar globe, with champagne sabre (a sword used to slice the top off champagne bottles), being able to drink bourbon from a 1956 Ford Thunderbird are all just some of the reasons why Bar Liberty is so special.

Romeo Lane is a cocktail bar in Melbourne, Australia. The drinks menu features classic cocktails and newly invented ones, as well as seasonal small plates. There’s plenty of old-world charm at this place with the addition of Prohibition era-style drinks to create an enjoyable experience for anyone looking for a drink.

StoryVille is Melbourne’s fairytale-themed bar, where the drinks are mixed with care and the decor is darkly whimsical. Expect to find a bewildering mix of classic children’s novels and grown up stories all over the walls, plus some very interesting magical cocktails mixed with care. The space has been designed by Josh Lefers (Pawn & Co, East 9th Brewing) who was given free reign to be as creative as he wanted.

The result is something unique and spectacular – Storyville fantasy themed bar transports guests through time with its storybook aesthetic where every detail tells a tale of decadence and intrigue. There are nods to classic fairy tales throughout the design, including Alice in Wonderland’s White Rabbit on the entrance wall.

Berlin Bar is a European bar with an East/West theme, inspired by the culture and history of Berlin City. It has been designed as a sophisticated yet relaxed space for those seeking out Melbourne’s best cocktails or those simply looking for a nightcap to end their day. The venue features classic seating alongside modern creativity and old fashioned cocktails. There are also many spaces to enjoy drinks at any time of year!

Lily Blacks is a cocktail bar for the true aficionado. Bringing the prestige of the golden era of cocktails to its illustrious lane way location, Lily Blacks serves up some of Melbourne’s finest pre-prohibition libations. From avant-garde classics to modern class drinks, this world renowned drinking venue has something for everyone and can be found tucked away on Meyers Place in Melbourne’s Paris end.

Above Board is a cocktail bar in the heart of Collingwood, Victoria Australia. Owner Hayden Lambert has impeccable bartending credentials (Bar Americano, the Merchant Hotel). Business partners Manu Potoi (Rockwell & Sons, Bar Liberty) and Cornelis Ribbe. There are no intimate corner tables or booths – the only place to sit is at the big 12-seat island bar, or the coveted pair of two-seater banquettes behind it.
